Tofu just ain't great without oil. Try this: Cut tofu into medium-sized cubes. Mix 1/2 cup cornstarch with 1/2 cup nooch and 1tbsp salt. Toss cubes in powder and then pan fry in 1/4" of oil until browned. Toss them in this peanut butter recipe and ooohhh boy is that some good and crispy deliciousness.

I laughed a lot during your video, especially the " I am not being dramatic" moments. No idea who Dr. Gregor is, but in India we have been using pretty much everything he advises but in a more gustatory appealing way. He has deconstructed everything and forced you to swallow healthy food in DIY sachets - ugh!! Add a 1/8 to 1/4 tsp of tumeric to anything that you saute - tofu, veggies, curries, sauces etc. You will not be able to and should not taste it. Tumeric is added to pretty much every savory dish in India. Indian cooking also starts or ends with tempering - where small amounts of spices are sputtered in oil, which is necessary to bring out the goodness in them. These spices are usually cumin, mustard, black pepper, curry leaves, while cinnamon, cloves, cardomom are mor exotic. They all aid in digestion, introduce the healty elements in small amounts and add tons of flavor. Water boiled with some cumin and drained is excellent for digestion and is given to babies for colic. You could also use these spices to make a herbal tea or brew them with the green tea. There are so many ways to consume amla/indian gooseberry that does not include a powder ( the powder is usually used in a hair mask) Yeung man cooking channel has a lot of recipes using the mushrooms that you swallowed ( I hate mushrooms) Mary's test kitchen channel shows how to make mushroom powder to add the ummani flavor for dishes.

What would happen if instead of tempeh seitan was used and instead of soy milk either water or almond milk was used ?
You can definitely replace tempeh with seitan and soymilk with water or almond milk! Just keep in mind that when you replace soy milk with water or almond milk, that will lower the protein content in your meals. 🌱😃

Common chinese method for getting better tofu texture (courtesy of Chef Wang). Use a firm tofu, squeeze water from tofu using hands (no need to use a press ever), cut into cubes and place in a large bowel...then the important part - fill the bowl with boiling water (from a kettle) enough to cover the tofu cubes; leave in water for 10m then drain water (be careful). Now tofu is ready to fry in a pan and the texture is much, much, better. For bonus crispiness, squeeze water from tofu with hands again and then fill bowl with a cup of corn or potato starch, then fry!

Whenever we eat new foods, or change our diet abruptly, it does take time for the bacteria in the microbiome to catch up. Cruciferous vegetables, eaten raw, can be hard on the tummy. It's better to cook cruciferous plants if raw is not well tolerated.

Mincing mushrooms and adding a bit to grains or legumes is a great way to get them in, working up, and also add a bass note with umami. Spice like hatch or chipotle and tomato also helpful to mask. Remember new gut troops grow as we feed them and create new cravings

Paused at 'struggles at the gym' part and just wanted to write that I love your transparency about the things that went on in your life, and not wanting to be there - it was extremely relatable. I've been in that situation many times myself and pushed through just like you did - the pain of regret is worse than the pain of going through with it - usually, our perception of an event is not the same at all as the event itself. Salt doesn't spill out in sweat if you are not overdosing the body with salt, is what I was told, so if you continue to cut back you should see the difference. Jeff Novick says we need 250mg sodium/day. The less you eat the less you want it like oil and sugar, eventually being repulsed by "normal" levels 👍 keep going

You can definitely be a great athlete as a vegan. I switched to whole foods diet plant-based last July. I just got second place in the Wisconsin Marathon this past Saturday with a time of 2:40. I ran 11 miles this morning and felt good. The power of plants repaired my body fast enough that I can get back into training right away. Turned 40 this year and I have so much more energy than I did before being vegan.
That's fantastic to hear about your marathon and it's awesome that you're doing it on a plant-based diet! Do you mind sharing any specifics about your meal regiment? I'm curious what your diet is like for such a cardio-heavy athlete. 💚
@@TheVeganGym I usually average around 3,000 calories a day, but would ideally like to average 2,800 in the near future. I researched elite marathoners and came to the conclusion that they average around 20 calories per pound, so for my goal weight of 140 lbs, that's where I got 2,800 calories. I try to hit macros of 15/70/15 (protein/carbs/fat). This allows me to hit just over 100g of protein per day and for my goal weight, will be 1.6 x kg. For breakfast, I either usually have oatmeal with protein powder, plant-based milk and a package of cauliflower rice along with fruit and coffee or throw in potatoes, a pound of vegetables, tofu and seasonings with fruit and coffee. For For lunch, I usually just do a fruit smoothie or a plant-based shake with chia seeds and flax seeds to get my omega 3s. For both, I add in a package of frozen cauliflower rice to add another veggie and creaminess to the smoothie. For dinner, it's usually three-bean chili with a ton of vegetables and a grain or I have potatoes with broccoli and beans/lentils. For snacks, it's usually a ton of fruit or more vegetables. My wife thinks I'm crazy that I can eat a whole package of spinach or other greens by themselves with no dressing. For dessert, my favorite is homemade bread with jam or another smoothie/shake. When I first transitioned to a plant-based diet, I was eating Just Egg, plant-based meat alternatives and was still eating chips, crackers and other processed foods. I no longer have a taste for any of these and usually the most processed foods I eat in a day are the protein powder I used (Earth Chimp) and my homemade bread. I run around 80-100 miles a week and strength train 3-4 hours a week. I try to ride the bike everyday even though I hate it, since I follow David Goggins and he says to always do something that you hate everyday :)
